Remove the completed omelette from the pan and let it rest until cool enough to handle. Slice it lengthwise into long, thick strips about 1.5 centimeters wide.

  • Wiping the knife blade with a damp cloth between every single cut is not optional for clean presentation. The rice starches build up rapidly on the blade, causing the delicate nori to tear.

Troubleshooting

The roll falls apart when cutting or eating

Cause: The roll was not wrapped tightly enough, or the knife was dull and dragged the nori

Fix: Re-wrap the uncut portion in the bamboo mat and squeeze more firmly. For already cut pieces, gently squeeze them back into shape.

Prevention: Apply firm, even pressure along the entire bamboo mat when finishing the roll, and ensure your knife is very sharp and damp

Rice is gummy or mushy

Cause: Too much water used during cooking, or rice was mashed instead of folded when mixing the vinegar

Fix: Cannot be fixed. The rice must be used as-is, though the texture will be compromised.

Prevention: Measure water precisely and use a sharp slicing motion with the edge of the rice paddle when incorporating the vinegar

Nori becomes incredibly tough and chewy quickly

Cause: The roll was made too far in advance, or warm rice was used, which steams the nori

Fix: Cannot be fixed once the nori absorbs the moisture
