Method
Arrange the sliced eggplant planks in a single layer over paper towels on a baking sheet and season both sides evenly with 3 grams of kosher salt, letting them stand for 20 minutes to purge excess moisture.
Press clean paper towels firmly across the surfaces of the eggplant planks to absorb all expressed surface moisture and excess salt.
Combine 45 milliliters of extra virgin olive oil, 20 milliliters of balsamic vinegar, minced garlic, dried oregano, black pepper, and the remaining 3 grams of kosher salt in a small mixing bowl, whisking thoroughly to create a loose emulsion.
Lay the prepared eggplant planks, zucchini planks, and onion rounds onto the baking sheet and coat both sides thoroughly with the garlic-balsamic mixture using a pastry brush.
Heat a dry cast-iron grill pan over medium-high heat until the surface reaches approximately 205°C (400°F).
Place the seasoned eggplant planks onto the hot grill pan using tongs and cook undisturbed for 4 to 5 minutes per side at 205°C (400°F) until softened and marked, then transfer to the baking sheet.
Lay the zucchini planks across the grill ridges and cook for 3 minutes per side at 205°C (400°F) until striped and tender-crisp, then transfer to the baking sheet.
Set the red onion rounds onto the grill pan and cook for 4 minutes per side at 205°C (400°F) until softened and slightly charred around the borders, then transfer to the baking sheet.
Brush the cut sides of the halved ciabatta rolls with the remaining 15 milliliters of extra virgin olive oil and toast them cut-side down on the grill pan for 1 to 2 minutes at 205°C (400°F) until warm and crisp.
Place the bottom halves of the toasted ciabatta rolls on a clean cutting board and stack the grilled eggplant planks, grilled zucchini planks, and charred red onion rounds evenly across all four sandwiches.
Distribute the 25 grams of whole fresh basil leaves generously in an even layer over the warm grilled vegetables across the four sandwiches.
Cover with the toasted top ciabatta halves, press down gently to settle the filling, slice each sandwich in half diagonally using a chef knife, and serve immediately.
Chef's Notes
- Osmotic salting of the eggplant collapses micro-air pockets within the spongy plant tissue. This prevents excessive oil absorption and guarantees a rich, silky texture once grilled.
- Tearing or placing fresh basil leaves whole preserves delicate essential oils and prevents polyphenol oxidase enzymes from turning the edges black upon contact with warm vegetables.
- To keep red onion rounds intact while grilling, insert a wooden toothpick horizontally through each slice from the outer edge toward the center before placing them on the grill pan.
- A sturdy artisan ciabatta with an open crumb and crisp crust is ideal because it absorbs the savory balsamic garlic pan juices without disintegrating.
Storage
Refrigerator: 3 days — Cool vegetables completely before packing. Store vegetables in an airtight container separately from bread to prevent sogginess. If storing assembled, wrap tightly in parchment paper and foil.
Reheating: Reheat leftover grilled vegetables in a preheated oven or skillet at 180°C (350°F) until they reach a safe internal temperature of 74°C (165°F). Assemble with fresh bread and raw basil after reheating.
Troubleshooting
Eggplant texture is tough, dry, and spongy rather than meltingly tender
Cause: The grill temperature was either too low or the eggplant was removed prematurely before the internal pectins fully broke down
Fix: Transfer undercooked eggplant planks to a baking sheet and bake in a preheated oven at 200°C (400°F) for 5 to 7 minutes until fully softened
Prevention: Maintain grill surface heat at 205°C (400°F) and cook until the center flesh turns translucent and yields completely to light touch
Bread turns soggy immediately after sandwich assembly
Cause: Grilled vegetables released excessive steam or residual liquid onto insufficiently toasted bread
Fix: Cannot be fixed once the crumb is saturated; consume immediately or briefly toast the assembled sandwich in an oven to firm up the exterior
Prevention: Ensure eggplant is thoroughly salted and patted dry during prep, grill bread until a firm crust forms, and allow vegetables to rest for 2 minutes on the baking sheet before assembly
Fresh basil turns dark brown, limp, and bruised
Cause: Basil leaves were placed onto scorching-hot vegetables straight off the grill or cut with a dull knife
Fix: Lift the top bread slice, discard discolored basil leaves, and replace with fresh unheated leaves
Prevention: Allow grilled vegetables to rest for 2 minutes so excess surface steam dissipates, and use whole unbruised basil leaves
Cultural Context
Inspired by the Italian tradition of panino con verdure grigliate, this sandwich highlights late-summer garden harvests when nightshades, squash, and herbs peak in natural sweetness. Rooted in the principles of cucina povera, the dish relies on high-heat charring to concentrate flavors and simple, high-quality extra virgin olive oil to bind the components.
