Method
Preheat the oven to 175°C (350°F).
Spread the food-grade oak chips in a single layer across the baking sheet and roast for 10 minutes until aromatic and medium amber in color.
Combine the whole milk, heavy cream, and toasted oak chips in the medium heavy-bottomed saucepan over medium heat, bringing the mixture to 85°C (185°F).
Remove the saucepan from heat, cover tightly with the lid, and allow the oak chips to steep undisturbed for 60 minutes.
Line the fine mesh sieve with cheesecloth, set it over a clean bowl, and strain the warm dairy mixture, pressing firmly on the oak chips to extract all infused liquid before discarding the chips.
Transfer the strained oak-infused dairy back into the saucepan and warm over low heat until it reaches 60°C (140°F).
In the heatproof mixing bowl, whisk together the egg yolks, granulated sugar, light brown sugar, and fine sea salt for 2 minutes until pale and slightly ribboned.
While whisking constantly, slowly pour 150 ml of the warm oak-infused dairy into the egg yolk mixture to temper the eggs without scrambling.
Pour the tempered egg yolk mixture back into the saucepan with the remaining warm dairy, whisking thoroughly to create a uniform base.
Cook the custard over medium-low heat, stirring constantly with the silicone spatula along the bottom and sides of the saucepan, until the mixture coats the back of a spoon and registers between 82°C and 84°C (180°F and 183°F) on a digital probe thermometer.
Pour the hot custard through the fine mesh sieve into a clean bowl set inside the large bowl for ice bath, stirring occasionally until the mixture cools to 15°C (59°F).
Cover the bowl tightly and transfer to the refrigerator to chill and mature for 8 hours at 3°C (37°F).
Pour the chilled base into the frozen bowl of the ice cream maker and churn for 25 minutes until the ice cream holds a soft, churned structure.
Scrape the churned ice cream into the airtight freezer container, press a sheet of parchment paper flush against the surface, seal with the lid, and freeze at -18°C (0°F) for 5 hours until thoroughly set.
