Method
Finely chop 150 g of milk chocolate on a cutting board using a chef's knife, then transfer the chopped chocolate into a heatproof mixing bowl.
Add 100 g of granulated sugar into a small saucepan over medium heat at 175°C (347°F), swirling the pan gently as edges liquefy until the sugar transforms into a clear, deep amber caramel.
Remove the saucepan from the heat source and immediately whisk in 30 g of cubed unsalted butter, 80 ml of heavy whipping cream, and 3 g of fine sea salt using a heatproof spatula until the bubbling subsides and the caramel is emulsified.
Warm 60 ml of heavy whipping cream in the cleaned small saucepan over low heat to 82°C (180°F), pour it over the chopped milk chocolate in the heatproof mixing bowl, and stir gently with a heatproof spatula until the chocolate melts into a glossy ganache.
Let both the milk chocolate ganache and the salted caramel sauce cool at room temperature until they reach between 27°C and 30°C (80°F and 86°F).
Pour the remaining 340 ml of chilled heavy whipping cream into a large mixing bowl and beat using an electric hand mixer on medium-high speed until medium peaks form.
Transfer half of the whipped cream into the cooled milk chocolate mixture and fold gently with a heatproof spatula until the mixture is uniform to create the milk chocolate mousse.
Measure out and reserve 40 ml of the cooled salted caramel for layering, then fold 60 ml of the remaining salted caramel into the rest of the whipped cream in the large mixing bowl using a heatproof spatula to produce the salted caramel mousse.
Distribute 5 ml of the reserved salted caramel across the bottom of each of the 4 glass dessert cups, spoon equal portions of the salted caramel mousse directly over the caramel base, and carefully layer equal portions of milk chocolate mousse on top.
Drizzle the final 20 ml of reserved salted caramel evenly over the surface of each finished dessert cup.
Place the assembled dessert cups in the refrigerator set at 4°C (39°F) and chill for at least 2 hours until both mousse layers are set firm.
