Method
Place the frozen strawberries, Greek yogurt, heavy cream, tahini, and confectioners' sugar into the blender jar.
Process the ingredients on high speed until completely smooth, stopping to scrape down the sides with a spatula as needed.
Add the crumbled sesame halvah to the blender and stir gently by hand to distribute the pieces throughout the mixture.
Transfer the soft serve into chilled glasses and serve immediately while frozen.
Chef's Notes
- For the smoothest soft serve, ensure your strawberries are fully frozen and break them into smaller pieces before blending.
- Adjust the amount of confectioners' sugar to your sweetness preference. Taste the mixture before adding the halvah and sweeten further if needed.
- Using full-fat Greek yogurt is crucial for a creamy texture. Lower-fat versions can result in a icier consistency.
- If you don't have a high-powered blender, you may need to blend in batches or let the frozen strawberries thaw slightly for a few minutes before processing.
- For a more intense swirl effect, reserve a small amount of halvah to sprinkle on top of the soft serve just before serving.
Storage
Freezer: 2 hours — Texture becomes brittle after 2 hours; best consumed immediately.
Troubleshooting
Blender blades are spinning but not moving the fruit
Cause: Air pocket formed around the blades or strawberries are too large
Fix: Stop the blender and use a spatula to press the ingredients down into the blades
Prevention: Add liquid ingredients (yogurt and cream) to the blender first
Cultural Context
While soft serve is an American invention, this recipe draws inspiration from Middle Eastern flavors. Tahini, a paste made from ground sesame seeds, is a staple in Levantine cuisine, often paired with sweet elements. Halvah, a dense, sweet confection also made from sesame, is popular across the Middle East and Eastern Europe, offering a delightful textural contrast.
