04

Add the pineapple rum, rhum agricole, lime juice, and 15ml of the prepared simple syrup into a cocktail shaker filled three-quarters with ice.

05

Shake the mixture vigorously for 30 seconds until the outside of the shaker is very cold.

0mFeel: The shaker feels painful to hold due to the cold.
06

Strain the liquid into a chilled coupe glass.

07

Squeeze the grapefruit twist over the surface of the drink to release aromatic oils, then discard the peel.

Chef's Notes

  • Chilling the coupe glass in the freezer for 10 minutes before serving significantly improves the drinking experience.

Storage

Refrigerator: 2 weeksSimple syrup only; prepared cocktail does not keep.

Troubleshooting

Drink is overly diluted and lacks flavor.

Cause: Shaking for too long or using small, wet ice cubes.

Fix: Cannot be fixed once diluted.

Prevention: Use large, solid ice cubes and shake for exactly 30 seconds.

Drink is too sweet.

Cause: Simple syrup was not measured accurately or sugar ratio was too high.

Fix: Add a small amount (2.5ml) of additional lime juice.

Prevention: Use a jigger for precise measurements of the 15ml syrup.

Cultural Context

The Daiquiri, originating in Cuba at the turn of the 20th century, is a classic sour cocktail that has inspired countless variations. This "Pineapple Express" builds on that legacy by incorporating tropical fruit and the distinct grassy notes of rhum agricole, a nod to the spirit's Caribbean roots, creating a sophisticated and refreshing drink.
