  • The tomato soup provides acidity that reacts with the baking soda for lift and adds moisture without a distinct tomato flavor.

Freezer: 3 monthsFreeze unfrosted cake wrapped tightly in plastic film.

Reheating: Serve at room temperature.

Troubleshooting

Cake is tough or rubbery

Cause: Overmixing the batter after adding the flour

Fix: Cannot be fixed

Prevention: Mix on the lowest speed possible and stop immediately once combined

Frosting is lumpy

Cause: Butter or cream cheese was too cold when mixing

Fix: Continue beating for 2-3 minutes or slightly warm the mixing bowl

Prevention: Ensure butter is fully softened to room temperature

Cultural Context

A popular mid-century American 'depression-era' style cake that utilized pantry staples.
