Method
Preheat the oven to 220C/425F. Place a heavy baking sheet in the oven while it preheats to help crisp the potatoes immediately upon contact.
In a large mixing bowl, toss the halved baby potatoes with the extra virgin olive oil, kosher salt, minced garlic, and half of the chopped fresh sage until evenly coated.
Carefully remove the hot baking sheet from the oven. Spread the seasoned potatoes onto the pan in a single layer, ensuring the cut sides are facing down. Roast in the oven for 25 minutes without disturbing them.
Remove the pan from the oven. Use a spatula to gently flip the potatoes, then return them to the oven to roast for an additional 20 minutes until the edges are completely crisp and the centers are soft.
Remove the potatoes from the oven and immediately transfer them back to the mixing bowl. Toss with the remaining fresh sage so the residual heat releases the herb's essential oils. Let rest for 5 minutes before serving.
Chef's Notes
- Preheating your baking sheet is a professional technique that jumpstarts the maillard reaction, guaranteeing a superior golden crust on the flat side of the potato.
- Reserving half of the fresh sage to toss with the hot potatoes at the end provides a burst of fresh, volatile aromatics that beautifully counterbalances the deep, earthy flavor of the roasted sage.
- Using a waxy or semi-waxy potato like baby Yukon Gold yields a delightfully creamy interior that contrasts perfectly with the crispy roasted skin.
- Do not line the baking sheet with parchment paper if you want maximum crispness. Direct contact with the hot metal conducts heat much more efficiently.
Storage
Refrigerator: 4 days — Store in an airtight container.
Freezer: 1 month — Texture may become slightly mealy upon thawing, best refreshed in the oven.
Reheating: Reheat in a 200C/400F oven for 10 minutes to restore crispness. Microwaving is not recommended as it will make the potatoes soggy.
Troubleshooting
Potatoes are soggy or lack a crispy exterior
Cause: Overcrowding the pan traps steam, causing the potatoes to boil rather than roast.
Fix: Increase oven temperature to 230C/450F, spread them out, and bake for an additional 10 minutes.
Prevention: Ensure potatoes sit in a single layer with empty space between them. Use two baking sheets if necessary.
Garlic is burnt and tastes bitter
Cause: Minced garlic was exposed to high heat on the bare pan for too long.
Fix: Cannot be fixed once completely carbonized.
Prevention: Ensure the garlic is clinging to the potatoes rather than resting directly on the baking sheet, or cut the garlic into slightly larger slivers instead of a fine mince.
Potatoes are stuck firmly to the baking sheet
Cause: The pan was not hot enough when the potatoes were added, or insufficient oil was used.
Fix: Let the pan cool for 5 minutes outside the oven; the starches will contract slightly and release from the metal.
Prevention: Always preheat the baking sheet and do not skimp on the olive oil.
Cultural Context
Roasted root vegetables are a foundational element of rustic European and North American home cooking. The pairing of garlic and sage leans heavily on traditional autumn and winter flavor profiles, bringing warming, highly aromatic qualities to a simple, globally cherished agricultural staple.
