Method
Preheat the oven to 200°C (400°F) with an oven rack positioned in the center.
Pat the chicken thighs and drumsticks thoroughly dry on all sides using paper towels to ensure optimal skin browning, then immediately dispose of paper towels and sanitize hands to prevent raw poultry cross-contamination.
Slice the zucchini crosswise into 1.5 cm thick rounds on a cutting board using a chef's knife.
Combine the chicken thighs and drumsticks in a large mixing bowl with 15 ml of extra virgin olive oil, garlic powder, dried oregano, 6 g of kosher salt, and 1 g of black pepper, tossing until each piece is coated.
Arrange the seasoned chicken thighs and drumsticks skin-side up on the rimmed baking sheet with at least 3 cm of clearance between pieces.
Place the zucchini rounds into the same mixing bowl, add the remaining 15 ml of extra virgin olive oil, 2 g of kosher salt, and 1 g of black pepper, and toss until evenly glazed.
Scatter the seasoned zucchini rounds across the rimmed baking sheet in a single layer around the chicken without layering zucchini beneath the meat.
Roast on the center oven rack at 200°C (400°F) for 35 to 40 minutes, until the chicken skin is crisp and deep golden, the zucchini edges are browned, and an instant-read digital meat thermometer inserted into the thickest part of both thigh and drumstick reads at least 74°C (165°F) away from the bone.
Remove the baking sheet from the oven and allow the chicken to rest undisturbed on the sheet for 5 minutes so juices reabsorb into the meat fibers.
Grate the yellow zest of the whole lemon directly over the warm chicken and zucchini using a microplane, cut the lemon into wedges using a chef's knife, squeeze half the lemon juice over the sheet pan, and scatter the fresh basil leaves across the pan just before serving.
Chef's Notes
- Always measure poultry doneness using an instant-read digital meat thermometer inserted into the thickest region of meat without contacting bone, verifying it meets the safe minimum of 74°C (165°F).
- Keep raw poultry work zones strictly segregated: clean cutting boards, knives, and contact surfaces with hot soapy water immediately after prep to avoid cross-contamination.
- Zucchini contains roughly 95 percent water; cutting rounds into sturdy 1.5 cm coins ensures caramelization and pleasant bite rather than water pooling on the sheet pan.
- Introduce fresh sweet basil only at the final garnish step off the heat; prolonged exposure to hot roasting temperatures turns delicate basil leaves black and diminishes essential oils.
Storage
Refrigerator: 3 days — Cool promptly and place in an airtight container within 2 hours of cooking; store at or below 4°C (40°F).
Freezer: 1 month — Freeze cooked chicken portions separately from zucchini, as roasted zucchini releases moisture and softens substantially upon defrosting.
Reheating: Reheat in a preheated oven at 190°C (375°F) until the chicken reaches a minimum internal temperature of 74°C (165°F) measured with a food thermometer.
Troubleshooting
Chicken skin is pale and soft instead of crisp
Cause: Chicken surface had excess moisture or baking sheet was overcrowded
Fix: Move pan to the top rack and switch the oven to high broil for 2 to 3 minutes, watching constantly to prevent burning
Prevention: Dry poultry skin thoroughly with paper towels and leave space between each piece on the pan
Zucchini is soggy and disintegrates
Cause: Zucchini rounds were sliced thinner than 1.5 cm or piled under the chicken pieces where juices collected
Fix: Cannot be fixed; drain excess pooled pan juices immediately to keep vegetable edges from further softening
Prevention: Slice into thick rounds of 1.5 cm and maintain a single layer directly on the metal sheet pan
Internal chicken temperature has not reached 74°C (165°F) after 40 minutes
Cause: Larger chicken pieces or uneven oven temperature calibration
Fix: Return the baking sheet to the 200°C (400°F) oven for an additional 5 to 7 minutes until the internal temperature reaches 74°C (165°F)
Prevention: Calibrate oven temperature and select evenly sized poultry cuts
Cultural Context
Sheet-pan roasting reflects modern adaptations of traditional Mediterranean home cooking, where bone-in poultry and seasonal summer produce share heat in communal hearth ovens. In southern Italy and Provence, mid-to-late summer garden zucchini and aromatic sweet basil are paired naturally with roast chicken to balance rich rendered poultry fat with bright acidity and herbal fragrance.
