Method
Preheat your oven to 200°C (400°F).
Tear a large sheet of aluminum foil and set it on the baking sheet. Place the scrubbed beets in the center, drizzle with extra virgin olive oil, and season with fine sea salt and black pepper.
Fold the aluminum foil tightly around the beets to create a sealed pouch that locks in natural steam during cooking.
Transfer the foil-wrapped beets on the baking sheet to the preheated 200°C (400°F) oven and roast for 45 minutes until a knife point slips effortlessly into the center of the largest beet.
Remove the beets from the oven, open the foil pouch to release steam, and allow them to rest until cool enough to handle safely, about 10 minutes.
Using paper towels held in both hands, rub the skins firmly off each beet over the cutting board, discarding the skins.
Slice the peeled beets into 6-millimeter thick rounds using a sharp chef's knife.
