Method
Preheat your oven to 200°C (400°F) with a rack positioned in the center.
Using a chef knife and cutting board, scrub the baby potatoes thoroughly and slice them into uniform 2.5 cm pieces.
Peel the red onions and slice into thick wedges, then stem, seed, and cut the bell peppers into 3 cm chunks on the cutting board.
In a small bowl, whisk together the honey, wholegrain mustard, dijon mustard, apple cider vinegar, finely chopped fresh rosemary, and 15 ml of olive oil until well blended and emulsified.
Transfer the cut potatoes, onions, and bell peppers onto the large rimmed baking sheet, drizzle with 30 ml of olive oil, sprinkle with fine sea salt and black pepper, and toss until evenly coated.
Nestle the whole raw pork sausages evenly among the seasoned vegetables in a single layer across the large rimmed baking sheet, then wash hands and preparation surfaces thoroughly to prevent cross-contamination.
Roast the traybake in the preheated oven at 200°C (400°F) for 25 minutes until the potatoes are tender when pierced with a fork and the sausages begin to brown.
Carefully remove the large rimmed baking sheet from the oven, pour the honey mustard glaze evenly over all sausages and vegetables, and toss gently using tongs to coat every piece thoroughly.
Return the glazed tray to the oven at 200°C (400°F) and roast for an additional 12 to 15 minutes, verifying with a digital instant-read meat thermometer inserted into the center of the sausages that they reach a safe minimum internal temperature of 71°C (160°F).
Remove the baking sheet from the oven and allow the traybake to rest for 5 minutes before portioning onto warm plates.
Chef's Notes
- Glaze timing is critical: honey contains simple sugars that burn above 160°C (320°F). Adding it during the final 15 minutes yields a luscious lacquered coating without charred bitterness.
- Pairing wholegrain mustard with smooth Dijon provides both textural whole mustard seeds and smooth acidity to cut cleanly through the rich pork fat.
- Space is flavor: do not crowd the tray. If the pieces touch tightly across the sheet pan, moisture cannot evaporate rapidly, resulting in steamed rather than caramelized roasted vegetables.
- For poultry sausages such as turkey or chicken sausage, remember that internal temperatures must reach 74°C (165°F) rather than 71°C (160°F).
Storage
Refrigerator: 3 days — Cool leftovers promptly within two hours of cooking and store in an airtight container.
Freezer: 2 months — Freeze in a freezer-safe sealed container. Note that roasted potatoes may soften slightly in texture upon thawing.
Reheating: Reheat refrigerated portions in a preheated oven at 180°C (350°F) for 12 to 15 minutes, or until the sausages and vegetables reach a safe internal temperature of 74°C (165°F).
Troubleshooting
Glaze burns or turns dark brown and acrid before vegetables are tender
Cause: The honey mustard glaze was applied at the very beginning of cooking instead of during the final roasting phase
Fix: Tent the tray loosely with aluminum foil immediately to shield sugars from direct radiant heat while vegetables finish softening
Prevention: Never add high-sugar glazes at the start; only apply for the final 12 to 15 minutes of roasting
Potatoes remain hard in the center while sausages are already cooked through
Cause: Potatoes were sliced too large or unevenly
Fix: Transfer cooked sausages to a plate, cover loosely with foil, and return the potato tray to the oven for an extra 8 to 10 minutes until tender
Prevention: Cut potatoes into consistent 2.5 cm pieces so cooking rates align with the sausages
Vegetables turn soggy and watery instead of developing roasted edges
Cause: Baking sheet was overcrowded or ingredients were stacked on top of each other
Fix: Drain excess pooled vegetable liquid from the corner of the tray and finish roasting on the top oven rack
Prevention: Use a heavy-gauge 45x33 cm half-sheet pan or divide ingredients between two baking sheets so air can circulate freely
Sausage internal temperature reads below 71°C (160°F)
Cause: Oven temperature was low or sausages were exceptionally thick
Fix: Return the tray to the oven for an additional 4 to 6 minutes until the internal temperature reaches at least 71°C (160°F)
Prevention: Always verify oven accuracy and check internal temperature using a digital instant-read thermometer
Cultural Context
The sheet-pan traybake is an evolution of classic British and Northern European farmhouse roasting, simplifying hearty Sunday flavors into an accessible all-in-one weeknight meal. Combining pork bangers with earthy potatoes, charred sweet peppers, and a sharp mustard-honey condiment celebrates time-honored pub culinary traditions with modern efficiency.
