Method
Rinse the fresh sour cherries under cool running water, gently rubbing them between your fingers to remove any stems, leaves, or surface debris. Drain in the fine mesh strainer and pat dry with a clean towel.

Submerge the brined and rinsed cherries in the cooled stage 1 syrup. Use a clean glass plate to keep any floating cherries below the surface. Cover the pot and let stand at cool room temperature (18 to 21°C / 64 to 70°F) for 24 hours. The cherries will release some liquid and begin absorbing the mild syrup.
Drain the cherries through the fine mesh strainer, reserving the stage 1 syrup in a sealed container. Return the cherries to the clean pot.
In the clean pot, combine 500ml filtered water and 200g granulated sugar. Heat over medium heat, stirring until dissolved. Bring to a brief boil (100°C / 212°F), then remove from heat and cool to room temperature (approximately 21°C / 70°F), about 20 to 30 minutes.
Pour the cooled stage 2 syrup over the drained cherries. Use the slotted spoon to stir gently and ensure all cherries are submerged. Cover and let stand at cool room temperature (18 to 21°C / 64 to 70°F) for 24 hours.
Drain the cherries through the fine mesh strainer, discarding or reserving the stage 2 syrup. Return the cherries to the pot.
In the clean pot, combine 400ml filtered water and 300g granulated sugar. Heat and stir until the sugar dissolves, then bring to a brief boil (100°C / 212°F). Reduce heat and simmer gently for 3 to 4 minutes to slightly concentrate the syrup. Remove from heat and cool to room temperature (approximately 21°C / 70°F), about 20 to 30 minutes.
Pour the cooled stage 3 syrup over the cherries. Cover and let stand at cool room temperature (18 to 21°C / 64 to 70°F) for 24 hours. The cherries should now appear plump, glossy, and richly colored.
Drain the cherries thoroughly through the fine mesh strainer. Spread them on a layer of cheesecloth and pat gently to remove excess surface syrup. They should appear saturated but not dripping.
In a clean bowl, combine 200ml maraschino liqueur, the split vanilla bean with its scraped seeds, the empty vanilla pod, lemon zest strips, citric acid, and almond extract if using. Stir gently with the small whisk until the citric acid dissolves.
Use the slotted spoon to pack the drained cherries into the sterilized 500ml glass jars, distributing them evenly without crushing. Pour the maraschino liqueur mixture over the cherries, ensuring they are completely submerged. Divide the vanilla pod and lemon zest strips between the jars. Tap each jar gently on the counter to release trapped air bubbles, then top up with additional liqueur if needed to cover.
Seal the jars with their airtight lids and refrigerate immediately at or below 4°C / 39°F. The cherries are ready to use after 48 hours of infusion but reach peak flavor complexity after 2 to 4 weeks, once the vanilla and lemon have fully melded with the liqueur.

- Calcium hydroxide, also called pickling lime, is the traditional firming agent for preserved cherries because it reacts with the natural pectin in the fruit to form calcium pectate, a more rigid structure than the original pectin. This reaction is what produces the characteristic crisp bite that distinguishes handmade maraschino cherries from commercial soft preserves.
- The progressive sugar infusion is borrowed directly from old-world candying techniques used in Italian and French confectionery. Increasing concentration gradually allows the cherries' cell walls to equilibrate with each new syrup strength, preventing the osmotic collapse that ruins most home-preserved fruit attempts.

Troubleshooting
Cherries are shriveled and wrinkled after sugar infusion

Cherries taste bitter, chalky, or chemical
