Method
Combine fresh pineapple juice, honey, apple cider vinegar, olive oil, grated garlic, grated ginger, 6g fine sea salt, and black pepper in a glass mixing bowl, whisking thoroughly for 1 minute until salt is dissolved and the honey is emulsified.
Trim any tough connective tissue from lamb neck fillets on a clean red cutting board, then slice meat into uniform 2.5 cm cubes. Wash hands, board, and knife thoroughly with hot soapy water immediately afterwards to prevent cross-contamination.
Submerge the diced lamb into the marinade in the glass mixing bowl, cover securely with a lid or plastic wrap, and transfer to the refrigerator to marinate for 1 hour and 30 minutes.
Prepare the sauce by mixing mayonnaise, lime zest, lime juice, minced red chilli, chopped coriander, grated garlic paste, and 1g fine sea salt in a small mixing bowl until completely combined, then cover and chill in the refrigerator.
Using a dedicated vegetable cutting board, chop the red bell pepper, yellow bell pepper, and red onion into uniform 2.5 cm flat squares and separated petals.
Slice the peeled fresh pineapple into 2.5 cm cubes and the firm bananas into thick 2 cm rounds on the vegetable cutting board.
Thread 8 pre-soaked bamboo skewers by alternating marinated lamb neck cubes, bell peppers, red onion petals, pineapple cubes, and banana rounds, ending with firm pepper pieces on both tips to secure the fruits.
Preheat the outdoor grill over direct heat to medium-high, reaching a grate temperature of 200°C (400°F), and clean the grates thoroughly with a grill brush.
Place skewers directly over medium-high heat and grill for 8 to 10 minutes, rotating skewers 90 degrees every 2 minutes with tongs, until edges are caramelized and the thickest lamb piece reaches an internal temperature of 63°C (145°F) on an instant-read digital meat thermometer.
Transfer the grilled skewers to a serving platter and allow them to rest undisturbed for 3 minutes so meat juices redistribute and food safety guidelines for whole lamb cuts are satisfied.
Serve the warm grilled lamb skewers immediately with the chilled lime, chilli, and coriander mayonnaise spooned alongside or in individual ramekins for dipping.
Chef's Notes
- Lamb neck fillet contains generous streaks of intramuscular marbling and connective collagen that render into exceptionally succulent meat over dry high heat, making it vastly superior to lean leg cuts for grilling.
- Active bromelain in fresh pineapple is one of nature's most potent tenderizers; keep marination strictly between 60 and 90 minutes at refrigerated temperatures to avoid enzymatic over-softening.
- Always select firm, yellow bananas with green tinges at the stems; their higher starch content holds structural integrity across open flames and caramelizes cleanly without turning to puree.
- Soak bamboo skewers in tap water for at least 30 minutes before assembling to saturate the wood fibers and prevent them from burning through during direct flame contact.
- Per FoodSafety.gov recommendations, ensure whole cuts of lamb reach an internal temperature of at least 63°C (145°F) verified with a digital probe thermometer, followed by a mandatory 3-minute rest.
Storage
Refrigerator: 3 days — Store grilled kebabs and flavoured mayonnaise in separate airtight glass containers at or below 4°C (40°F).
Reheating: Reheat leftover skewers in an oven preheated to 175°C (350°F) until the center of the lamb registers at least 74°C (165°F) on an instant-read thermometer. Serve chilled mayonnaise cold on the side.
Troubleshooting
Lamb meat has an unpleasantly soft or mushy surface texture instead of a tender, clean chew
Cause: The lamb marinated longer than 2 hours in raw pineapple juice containing active bromelain enzyme, excessively digesting muscle fibers
Fix: Cannot be fixed once structural proteins degrade; ensure exterior is well caramelized on the grill to add surface texture
Prevention: Strictly limit marinating time to 90 minutes when using fresh unpasteurized pineapple juice
Banana slices slip or break away from the skewer and drop between the grill grates
Cause: Bananas were overly ripe with loose starches or cut too thin, causing them to disintegrate under heat
Fix: Place a square of perforated aluminium foil directly on the grill grates to support delicate fruit while cooking
Prevention: Select slightly underripe bananas with green tips, cut into minimum 2 cm rounds, and brace them between sturdy pepper petals
Exterior marinade scorches black before the internal lamb temperature reaches 63°C (145°F)
Cause: Excess residual honey and fruit sugars exposed to an overly hot flame caused thermal flare-ups
Fix: Immediately move skewers to an indirect heat zone, close grill lid, and let meat reach internal temperature via ambient heat
Prevention: Maintain grill at 200°C (400°F) and shake off excess surface marinade before placing skewers on the grates
Cultural Context
Skewered lamb cooked over embers is a foundational culinary tradition spanning the Levant, Central Asia, and the Mediterranean. This modern barbecue adaptation introduces a vibrant fusion profile, marrying the rich savouriness of Mediterranean lamb kebabs with tropical pineapple, plantain-style grilled bananas, and a bright lime-chilli emulsion inspired by Caribbean and Latin American street barbecue traditions.
