Method
Place the canned solid white albacore tuna into a fine-mesh sieve set over a bowl and press firmly with the back of a fork to expel all liquid.
Place the flat-leaf parsley on a cutting board and mince finely using a sharp chef knife.
Transfer the drained tuna to a medium mixing bowl and mash gently with a fork to break apart any large dense chunks.
Add the Dijon mustard, freshly squeezed lemon juice, and extra-virgin olive oil directly to the shredded tuna.
