Method
Preheat the oven to 220°C (425°F) with the oven rack positioned in the lower third.
Place the whole chicken on a dedicated cutting board and pat the exterior skin and interior cavity completely dry using paper towels, then immediately discard paper towels and sanitize hands and prep surfaces to prevent cross-contamination.
Season the inside of the cavity evenly with 5 g of kosher salt and 1 g of freshly ground black pepper.
Stuff the seasoned cavity tightly with the halved garlic head, lemon halves, fresh thyme sprigs, and fresh rosemary sprigs.
Tuck the wing tips backward under the chicken shoulder joints and tie the drumstick ends together securely with kitchen twine to ensure even cooking.
Scatter the quartered onion across the bottom of the roasting pan, set the roasting rack on top, position the chicken breast-side up on the rack, rub softened butter across the entire skin, and season with the remaining 10 g of kosher salt and 3 g of black pepper.
Roast the chicken in the preheated oven at 220°C (425°F) for 20 minutes to jumpstart skin browning.
Reduce the oven temperature to 190°C (375°F) without opening the door and roast for 50 to 55 minutes longer until an instant-read thermometer inserted into the thickest part of the inner thigh without touching bone reads 74°C (165°F).
Transfer the roasted chicken to a clean cutting board, leave it uncovered, and rest for 15 minutes while preparing the gravy.
Set the roasting pan over medium heat on the stovetop, pour in the dry white wine, and scrape all browned bits from the pan bottom using a wooden spoon.
Pour the deglazing liquid and roasted pan juices through a fine-mesh sieve into a measuring container, discard solids, and measure out 45 ml of rendered chicken fat and pan drippings.
Heat the 45 ml of strained pan drippings in a small saucepan over medium heat, add 30 g of all-purpose flour, and whisk continuously for 2 minutes to cook out raw starch.
Gradually pour 480 ml of warm chicken stock, any remaining strained pan juices, and optional Worcestershire sauce into the roux while whisking vigorously, bring to a gentle boil, then simmer for 4 minutes until thickened.
Remove and discard the kitchen twine, carve the rested chicken into breasts, thighs, drumsticks, and wings using a carving knife on the cutting board.
Arrange the carved chicken on a serving platter and ladle warm pan gravy generously across or beside the meat.
Chef's Notes
- Resting the chicken uncovered on a cutting board keeps the skin crisp by letting steam escape into the room rather than trapping it against the skin.
- Tucking the wing tips behind the shoulders prevents delicate tips from burning during the initial high-heat roasting phase.
- If your chicken yields slightly less than 45 ml of rendered pan fat, supplement the deficit with softened unsalted butter before adding flour to keep the roux ratio correct.
- Simmering your chicken stock in a separate saucepan prior to deglazing prevents rapid thermal shock and avoids lumps when whisking the gravy.
Storage
Refrigerator: 4 days — Cool and refrigerate carved meat and gravy in separate airtight containers within 2 hours of roasting.
Freezer: 3 months — Carve meat from bones and freeze with gravy in airtight freezer-safe containers.
Reheating: Reheat leftover chicken and gravy in a covered baking dish or saucepan until internal temperature registers at least 74°C (165°F) throughout.
Troubleshooting
Chicken skin is pale, flabby, or soft rather than crisp
Cause: Moisture on the skin surface before roasting or low initial roasting temperature
Fix: Place the bird under the oven broiler set on high for 2 to 3 minutes, watching continuously to avoid burning
Prevention: Thoroughly pat the poultry dry with paper towels and maintain the initial 220°C (425°F) blast
Gravy forms lumpy flour clusters
Cause: Liquid was added too quickly or was too cold when poured into hot roux
Fix: Pour the finished gravy through a fine-mesh sieve or puree briefly with an immersion blender
Prevention: Warm the stock beforehand and whisk continuously while adding liquid in a thin stream
Gravy tastes overly salty
Cause: Pan drippings contained high salt concentrations from seasoned chicken skin
Fix: Whisk in 60 ml of unsalted stock or warm water, then simmer for 2 minutes to restore balance
Prevention: Use unsalted or reduced-sodium stock and avoid adding salt until gravy finishes simmering
Cultural Context
The roast chicken dinner is an enduring classic across British and Western culinary traditions, celebrated as the quintessential Sunday roast centerpiece. The combination of simple garden aromatics with rich pan gravy reflects centuries of domestic roasting techniques designed to maximize flavor from every part of the bird.
