Method
Place the pitted Medjool dates into a small heatproof bowl and pour 60 ml of boiling water at 100°C (212°F) directly over them, letting them soak for 10 minutes to soften tough skins.
Pour the softened dates along with all their warm soaking water into the container of a high-speed blender.
Add the chilled cooked brown rice at 4°C (40°F) or below, unsweetened almond milk, creamy almond butter, ground cinnamon, pure vanilla extract, and fine sea salt into the blender jar.
Secure the lid and blend on low speed for 15 seconds to break down the dense rice grains and date pieces without splattering.
Increase blender speed to high and blend continuously for 60 seconds until the mixture is fully emulsified, smooth, and micro-aerated.
Add the ice cubes to the blender container and blend on high speed for 30 seconds until the ice is completely crushed and integrated into a thick, frosty drink.
Use a silicone spatula to scrape down the sides, then divide the smoothie equally between two chilled serving glasses and serve immediately.
Chef's Notes
- Opt for cooked short-grain or medium-grain brown rice. Their higher amylopectin content yields a thicker, creamier mouthfeel akin to a classic milkshake without using bananas or dairy.
- For strict food safety, cooked brown rice must be chilled to 4°C (40°F) or below within 2 hours of cooking to avoid Bacillus cereus spore propagation, and used within 48 hours.
- To introduce a nutty toasted flavor reminiscent of roasted grain teas, pan-toast your cooked brown rice in a dry skillet over medium heat for 3 to 4 minutes until fragrant, then chill thoroughly before blending.
- If your blender lacks high-wattage power, puree the soaked dates and soaking liquid alone first before introducing the rice, almond milk, and nut butter.
Storage
Refrigerator: 1 day — Store in an airtight glass container at 4°C (40°F) or below. Shake vigorously before drinking as natural phase separation will occur.
Freezer: 1 month — Freeze in silicone molds or freezer-safe jars leaving 2 cm headspace. Thaw in refrigerator and re-blend for 30 seconds to restore smooth texture.
Reheating: Not applicable; serve chilled.
Troubleshooting
Smoothie texture feels gritty with small bits of rice and date skin
Cause: Dates were insufficiently softened or blender was not run at maximum RPM long enough
Fix: Pass the smoothie through a medium-mesh strainer using a silicone spatula to catch residue, or re-blend for 60 seconds
Prevention: Ensure soaking water is boiling when poured onto dates and process on highest blender speed for the full recommended time
Smoothie separates quickly into clear liquid and settled pulp
Cause: Prolonged blending generated excessive motor friction that melted the ice and overheated the emulsion
Fix: Add 30g of extra ice cubes and pulse for 15 seconds to re-chill and re-bind the suspension
Prevention: Blend the initial base until smooth before dropping in ice, and keep the ice blending stage strictly under 30 seconds
Mixture is too thick and stalls the blender blades
Cause: Brown rice had high gelatinized starch density or absorbed excessive liquid during storage
Fix: Pour in 30 ml of cold almond milk at a time and pulse on medium speed until blades spin freely
Prevention: Weigh cooked rice precisely on a digital scale rather than using measuring cups
Cultural Context
Grain-thickened chilled drinks have a storied heritage spanning centuries, exemplified by Spanish and Latin American horchatas as well as traditional East Asian roasted grain infusions. This recipe translates those classic techniques into a modern plant-based smoothie format, employing cooked whole-grain brown rice as a complex carbohydrate base. By relying solely on mineral-rich whole Medjool dates for natural sweetness, it aligns with contemporary whole-food breakfast rituals prioritizing balanced satiety.
