Method
Position an oven rack 15 cm (6 inches) below the broiler element and preheat the oven broiler on high to 260°C (500°F).
Place the sliced bell peppers, whole cherry tomatoes, quartered shallots, and smashed garlic into a large mixing bowl.
Drizzle olive oil over the vegetables, add the dried oregano, kosher salt, and black pepper, then toss until every piece is evenly coated.
Spread the seasoned vegetable mixture out onto the rimmed sheet pan in a single, well-spaced layer.
Using a chef knife on a dedicated cutting board, make three shallow diagonal scores along the top of each raw sausage link to release steam and prevent casing ruptures, then wash hands and equipment thoroughly with warm soapy water to avoid cross-contamination.
Nestle the sausage links directly onto the sheet pan between the vegetable clusters so that all ingredients contact the pan base.
Slide the sheet pan under the preheated broiler and broil for 10 minutes until the sausage casings brown and the peppers begin softening.
Use heat-safe tongs to rotate each sausage link 180 degrees and stir the surrounding vegetables so they cook uniformly.
Return the sheet pan to the broiler and cook for 8 to 10 minutes until the cherry tomatoes blister and collapse and an instant-read meat thermometer inserted into the thickest part of the sausages registers at least 71°C (160°F) for pork sausage or 74°C (165°F) if using poultry sausage.
Remove the pan from the oven and allow the sausages and vegetables to rest undisturbed for 4 minutes to retain moisture and let pan juices settle.
Scatter freshly torn basil over the warm sausages and vegetables, then serve straight from the sheet pan.
Chef's Notes
- Scoring the sausage casings shallowly lets rendered fat escape into the pan, naturally basting the shallots and tomatoes with savory richness.
- Burst cherry tomatoes mingle with olive oil, sausage drippings, and roasted garlic to create an instant, flavorful pan sauce without extra steps.
- If substituting poultry sausage links such as turkey or chicken Italian sausage, always verify internal temperature reaches a minimum of 74°C (165°F) for food safety.
- Cut peppers and shallots into uniform widths of roughly 2 cm so that they cook through at the exact same rate as the sausage links.
Storage
Refrigerator: 4 days — Cool within two hours and store in an airtight container at or below 4°C (40°F).
Freezer: 2 months — Store in an airtight container or freezer bag. Defrost thoroughly in the refrigerator before reheating.
Reheating: Reheat leftovers in a preheated oven at 175°C (350°F) or in a skillet over medium heat until the internal temperature reaches at least 74°C (165°F).
Troubleshooting
Sausage casings are charring heavily while the internal temperature remains below 71°C (160°F)
Cause: The oven rack is positioned too close to the broiler element or the broiler runs exceptionally hot
Fix: Move the sheet pan down to the middle rack, switch oven from broil to bake at 200°C (400°F), and bake until the internal temperature reaches 71°C (160°F)
Prevention: Position the sheet pan 15 to 20 cm below the heating element rather than directly beneath it
Vegetables steam and turn waterlogged instead of roasting and blistering
Cause: The sheet pan was overcrowded or vegetables were wet prior to tossing in oil
Fix: Spoon off pooled liquid from the corner of the pan and broil 2 to 3 minutes longer while watching closely
Prevention: Dry produce completely before seasoning and use a full half-sheet pan to ensure ingredients sit in a single layer
Cultural Context
Sausage and peppers has long been a cornerstone of Italian-American street festivals and family gatherings across the northeastern United States. Traditionally braised in wide cast-iron skillets or simmered in tomato sauce, this sheet-pan broiling method reimagines the classic profiles with modern weeknight speed and blistered texture.
